Koch: A thick, sour, dough-like bread used as a major carbohydrate staple in southern Ethiopia, especially among the Gurage and Wolaita peoples.

It’s made: The scraped pulp and grated fibres from the pseudo-stem of the enset plant are packed into pits and fermented anywhere from three months to over a year.
